My organisation

The main objective of ICTAN is to carry out innovative and quality scientific and technological research to produce, package and preserve safe and healthy foods that meet society’s current demands regarding sustainability, and their effect on the population’s nutrition and health. All this by establishing scientific evidence on the physiological effects of food, its constituents and by-products on health and disease prevention. These characteristics make ICTAN a benchmark research centre for establishing collaborations with national and international research groups, training students and new professionals and transferring the knowledge acquired to industry and society.

About me

Cristina Martínez Villaluenga is a Senior Researcher at the Institute of Food Science, Technology, and Nutrition (ICTAN) within the Spanish National Research Council (CSIC). Her research focuses on the impact of bioprocessing techniques—such as fermentation, germination, and enzymatic biotechnology—on the nutritional quality, digestibility, and functionality of plant proteins, as well as the development of functional foods tailored to specific health needs (https://www.ictan.csic.es/en/ictan-member/cristina-martinez-villaluenga/). Dr. Martínez has established an extensive research network through collaborations with leading institutions in the EU, Canada, Brazil, Mexico, Peru, Ecuador, and Argentina, and has worked closely with global companies to bridge the gap between academia and industry. She serves as an Editor for MDPI and Frontiers journals, has edited several books on food bioprocessing, digestion, and health, and is a member of the working group on Quality, Production, Packaging, and Sustainability of the Platform "Food for Life Spain." Dr. Martínez has published over 150 scientific papers, holds an h-index of 50 (Scopus), with more than 7,000 citations, and has been recognized in the "Ranking of the World Scientists: World's Top 2% Scientists" since 2020 till now.
