My organisation

The UMRF research axes will contribute to advancing scientific knowledge regarding: i) The role of structural and functional microbial flows from raw milk to cheese in interaction with the constituents of the dairy matrix in the construction of sensory and usage qualities of traditional cheeses, ii) the mechanisms of microbial interaction that ensure a functional balance of microbial communities at the expense of pathogenic and spoilage species, iii) the nutritional and health benefits of traditional cheeses with complex microbiota and how to optimize these benefits while preserving the qualities of the cheeses.

About me

Magali Cordaillat-Simmons earned her PhD in 2005 at Université Descartes - Paris, France, in Cardiovascular Pharmacology. She then worked as a Research Associate at the University of Virginia, USA, where she studied the influence of epigenetics on renin expression.

For 14 years she was Scientific & Regulatory Affairs Director at the Pharmabiotic Research Institute (PRI), located in France.The PRI is Europe’s first and only expert regulatory group dedicated to supporting its members in the development and market authorization of Microbiotic Medicinal Products (MMPs). As a non-profit, Pro-industry organization, the PRI is uniquely positioned to both be a trusted point of contact for the European regulatory authorities, as well as an agile and neutral partner for the Microbiome/Health industries. Dr. Cordaillat-Simmons supervised the Association’s analysis of the European Pharmaceutical Regulatory framework as well as the PRI’s regulatory intelligence strategy so that “Microbiotic Medicinal Products” become a therapeutic reality for European patients.

Today Magali Cordaillat-Simmons has Joined the University Clermont Auvergne as Junior Professor where she focuses her research on regulatory science aspects such as the impact of manufacturing processes on functionality of microbial strains and their effect on human health.
